harvesting our olives
Harvest is the highlight of a year long hard work and a delicate process of preserving the vitality of our grove, motivating it for growth and flowering and protecting it from various pests.
It takes knowledge but also some support from nature and weather conditions for the olives trees to award us with the perfect olives full of oil.
Time of harvest and length varies each year as we harvest the trees at the best time for each variety.
It is more time consuming but we hand pick all our olives and transport them to the mill in low cases so they would not get damaged or pressed.
They are cold pressed the same day in order to preserve all nutrients and it's refreshing fullness of taste.
After we decide now is the perfect time for the olives to be harvested we gather our friends and family, prepare some food and roll up our sleeves.
